Super Bowl Skinny Spinach & Artichoke Dip


                                                                           
                                                                                                  
 Prep time: 30 min    Yield: 32 servings (2 tbsp. = 1 serving)       
(About 59 cals per serving)                 
                          
                                  Ingredients
·          1 tablespoon extra-virgin olive oil
·          1 cup light mayonnaise
·          4 ounces tub-style fat-free cream cheese
·          1 teaspoon hot pepper sauce (such as Tabasco)
·          1 teaspoon capers, drained
·          1/4 teaspoon freshly ground black pepper
·          1/4 teaspoon dry mustard
·          1 (14-ounce) can artichoke hearts, drained
·          1 (10-ounce) package frozen chopped spinach, thawed and drained   
·          3/4 cup preshredded part-skim mozzarella cheese
·          1/4 cup grated Parmesan cheese
·          1/2 cup sliced green onions
·          1 tablespoon fresh lemon juice




1. Preheat oven to 350°.
2. Combine first 8 ingredients in a food processor,  until smooth. (Should take 15-30 seconds)
3. Add remaining ingredients; pulse 5 times, then process until mixture is consistent throughout (about 10 seconds). With a rubber spatula, transfer mixture evenly to a 1-quart casserole dish, smoothing top
4. Bake at 350° for 25-30 minutes or until lightly browned and bubbly at the edges. Remove from oven; cool 10 minutes.

It’s super bowl weekend and you know what that means…. lots of food & booze! 

So, if you’re like me and could care less about watching the game
you’ll probably find yourself hovering around the appetizers and sipping on wine all night. 

Obvi, it’s okay to indulge from time to time,

 but if you’re looking to avoid the bloat, here is a delicious recipe for 
Spinach  & Artichoke dip that tastes great,
 and will only clock you in at 59 cals per serving!! 

Lets be honest, no one actually only eats 2 tbsp. … 

but with this recipe, you can afford to cheat a bit!


Extra Skinny Tip: Substitute veggies  in-leu-of tortilla chips for at least 1/2 of your serving.
Have your cake and eat it too, that’s my motto!
