My Life Monday + Starbucks Skinny PSL


I think I’m one of the few people in the world who actually enjoy Mondays. Something about a fresh start to the week just makes me happy… plus monday’s happen to be “admin” style days in my company so I generally get to stay in my PJ’s through the afternoon 🙂

My favorite way to start the morning is to make a pot of coffee, play some mellow tunes, and read or scroll through instagram/snapchat in bed for 30 minutes or so. I’m not a morning person at all, so I like to gradually wake myself up rather than hopping out of bed the second I turn off my alarm.

I generally eat something pretty light {usually fruit} for breakfast, unless I wake up unusually hungry that day in which case I have a bowl of Muesli with Almond Milk and a 1/2 scoop of Vega One Protein Powder {Yes I mix it in with the cereal milk, it tastes way better!}

I recently purchased Mary Kate & Ashley’s fashion book ‘Influence’ so today I flipped through that for a bit while drinking out of my “Blogging Day” mug…. it just seemed appropriate 🙂

Today I had a meeting with my Manager at Starbucks from 11:00-1:00 so I went ahead and got dressed like a normal person and grabbed my laptop and notebook and headed out the door. We basically just chatted about work stuff, future plans, etc. and drank our coffees– today I ordered a twist on a PSL: Grande Dark Roast with 2 pumps SF Vanilla, 1 pump Pumpkin Spice, and topped with Steamed Soy Milk. YUM!

After we left I came back home and finished up some admin work, eat lunch, and work on my blog a bit.

Lunch was my  Cauliflower “Fried Rice” aka stir fry that I make in big batches every week to keep on hand for those days when I get home completely famished and can’t bother to cook.

I rented a few redbox movies to watch while working on my computer and eating lunch: Money Matters was pretty good and I’d definitely say it was worth the $1.50.

Pre-Workout meal of Baked Sweet Potato with PB2, Sliced Bananas, Cinnamon & Stevia


Went to workout, today was a non-running day so I did 50 min on the stair-master while reading from my Kindle app on my Ipad. If you haven’t tried reading on the stair-master, I highly suggest! It makes the time go by so much faster.

Next up I tried watching ‘By the Sea‘, but that only lasted a few minutes before realizing it wasn’t worth my time.
Now I’m watching “How to be Single” while writing this post and snacking on edamame… movie is pretty funny, it’d say it kind of reminds me of  He’s Just Not That in to You.’



After showering and getting in my PJ’s, I made some of my homemade vegan-popcorn {post coming on that soon too} poured a glass of red wine, and settled in to an episode of Vampire Diaries… so basically Olivia Pope and I are spirit-animals 😉
