Cake + Kitties

Hi Friends! Happy Spring 🙂 I know I know, technically it’s not Spring yet, but it’s March and in Texas that’s pretty much Spring. I’ll give it a few more weeks, but I’m definitely breaking out the White Jeans soon…. Labor Day Schmabor Day! Those rules are so outdated, am I right?!

Before I teach you my amazing protein loaf recipe, here are a few pics of my new family member- Marley 🙂 I adopted her from the Second Chance Animal Shelter and she is about 6 months old. When I very first adopted her I was a little discouraged as she wouldn’t come out from hiding for most of the day.

Thankfully, she has made a complete 180 and now follows me around all day and purrs and runs around my apartment like a maniac. Needless to say, she is quite the entertainment and I have to refrain myself from snap chatting her too much because, welllllll,  I don’t want to be THAT GIRL. Yeah we all know those people. Btw- if you wanna follow me on snapchat, my user name is AbbyDarlington {yepp….never would have guessed that right?}

Okay okay, so on to my delicious protein “Angel Food Cake” but in the form of a loaf recipe. You can absolutely make this in a circular pan instead (thats what the original recipe called for) but I don’t own one, and home girl didn’t feel like going out and buying a different shaped pan. I also didn’t have a mixer, so I used my nutri-bullet… so just goes to show you that you don’t have to have the “proper” kitchen supplies to make healthy and delicious treats. SERIOUSLY… I own 1 cutting knife… 1.  And I cook 99% of the food I eat at home.

Entire loaf/cake is 184calories (38P/3C/1F)

– 7 egg whites– not from carton.. it won’t turn out the same
– 17g Protein Powder (I use Whey Isolate but I’m sure a Whey/Casein blend would be even better)
– 1 tsp Cream of Tartar (Weird I know, find it in the baking isle)
– 1 tsp flavored extract of choice (I use butterscotch Stevia.. but if you have Vanilla extract use that)
–  Stevia to taste 

1. Preheat oven to 350 degrees. 
2. Separate egg whites, and place all ingredients except protein powder in mixing bowl.
3. Mix on highest speed using the whisk beater (for those of you who have a mixer) for a few minutes until there are high peaks. I used a nutribullet… definitely doesn’t make the cake as fluffy but I still liked it.
4. Sprinkle whey on top, “folding” in gently… Don’t over-mix the whey into the rest of the batter. 
5. Pour into sprayed pan (I top it with Cinnamon here, but that’s optional) and place in the oven for 20 minutes.
6. Take out of oven and let cool for a few minutes.
7. Cut into slices and place in baggies for an on-the-go protein-packed treat, or dig in right out of the tin! 

 It’s not burnt, it’s the cinnamon I top the batter with… because Cinnamon is my spirit animal
