Hi beautiful readers,
Wanted to give a bit of a ‘whats been going on in my life lately’ update since I’ve been a little more absent on here and social media than I usually am.
So last week we moved me out of my apartment and back into my parents house (temporarily) until the wedding. It’s been quite the process because we have to figure out what stuff is worth transporting to Boston and what should just be donated.
We are having a moving service take my car up to Boston while we are on our honeymoon, so I have to make sure to divide up my stuff that stays at my parents house, versus what goes on my honeymoon with me, versus what needs to be packed in the car to ship to Boston.
Needless to say, it’s been a bit hectic in the Darlington household. However, I’d say its a lot less stressful than trying to live at my apartment this next week and scrambling to move all my stuff out right before the wedding. It’s also more convenient to be able to discuss last minute details with my parents in person rather than trying to text about everything….. especially since I’m the WORLDS WORST TEXTER. lol.
Today I woke up around 8am (hit snooze a few times) got up and made some French Vanilla Coffee, and poured myself a glass of Suja Power Greens. Tip: Drinking Green Juice with a straw makes it so much easier to go down…. promise. Although honestly I don’t think this one is nearly as bad as others I’ve had, I really don’t mind the taste. Plus the benefits make it so worth it IMO.
After downing 2 cups of coffee and my green juice while checking email, reading some blogs posts, jotting down a to-do list in my journal, I started making my breakfast.
I pretty much have the same thing every morning, because as I’ve said before, I’m a little OCD about my food and also a MAJOR creature of habit.
For me, breakfast every morning typically consists of an egg white omelet filled with whatever veggies I have in the fridge that day. When I opened my cauliflower rice this morning it smelled terrible, so I threw it away and just stuck with an asparagus and avocado (roughly 1/2) omelet. I always top it with sea salt and nutritional yeast because they make everything taste better.
Also snacked on 1/2 an apple while starting this post…. wasn’t really hungry but my mom was cutting one up and offered it…. and it’s an apple so I mean who cares. lol.
Also, I should note that I don’t eat huge meals. I’m more of a grazer, but I also don’t eat typical ‘snack-y’ foods if that makes sense. I try to only eat whole foods, but I eat smaller portions of them throughout the day. This is a little difficult when I’m on the go, but works perfectly for me on the days I’m working from home and have access to my fridge at all times.
I also want to note that I have switched up my diet a lot lately — gearing more towards fats and whole foods rather than just low-calorie non-nutrient dense foods. Also, I can’t believe I’m saying this, but I also haven’t been working out nearly as much. I used to workout 7 days a week (I know that’s bad, but being honest). If I skipped a workout I would feel very anxious and I just really didn’t have a healthy mind-set around it.
Okay so this looks so gross, I know. But it’s DELICIOUS. I mix salmon (canned) with avocado and sea salt, mash it up then dip Flax Seed Crackers in it. YUM.
If you told me then that I’d be snacking on a mixture of salmon, avocado, and flax seed crackers and skipping my morning workout I’d think you were crazy (these are all healthy foods, but I used to think that many fats in one sitting was a no-no).
How wrong I was. I’d say I’m thinner now than I was when I was running 6 miles a day to be honest. I’m not sure how thats possible, but there is honestly something to be said for filling you diet with an abundance of whole foods. I truly do believe now that our bodies are just able to process foods in their whole state better than they can processed, even if the processed version has way lower calories.
After this I went to my apartment to help my dad and brother move my bed out of my apartment, then I did a short 30 minute run. I hadn’t worked out since moving into my parents house so I felt like I should get a little sweat in while I was already in workout clothes.
By the time I came back to the house and showered, it was already 3:30. I had a cup of decaf coffee and then proceeded to have my favorite salad:
- Mixed Greens
- Hearts of Palm
- Artichoke Hearts
- Avocado (1/3)
- Balsamic Vinegar
- Sea Salt
- Nutritional Yeast
Since I had lunch so late, dinner was kind of just a plate of randomness….
Chicken, Avocado, Cauliflower Rice, and Asparagus (I had two plates of this exact thing). And yes I’m still a child and NEED ketchup for my chicken.
Later on I had a vanilla protein shake (I use Vega Protein + Greens) with Almond Milk… which I consider to be like a dessert.
Eeep only 4 more nights of being a single woman! Crazy.
