Okay so this isn’t EXACTLY spaghetti squash… but it’s close enough. All these ingredients can be purchased at any general food store… except the spiralized butternut squash noodles (sorry, these were found at whole foods) because #lazy.
I do have a spiralizer and do it myself sometimes, but I happened to be in the area and stopped in to Whole Foods and of course spent way more than I should have. Oh well… back to the recipe.
So I started with these butternut squash noodles and boiled them in a pot with 1/2 water and 1/2 chicken broth (gives the noodles extra flavor). Leave them in for 5 minutes with the lid on.
While these were cooking I cut up some zucchini to cook in a pan. I pretty much use whatever seasonings are in my cupboard- which today was Paprika, Cayenne, Italian Medley, and Chipotle Flakes.
After draining the noodles I sprinkle some non-dairy cheese and nutritional yeast so that it melts in with the noodles. I then added 2 tablespoons of Pizza Sauce on top of the cheese and then add my zucchini/squash stir fry.
I took a few bites and realized it was still missing something so I cracked a bit of Pink Himalayan Sea Salt on top… much better! I know that sounds like a lot of seasonings already, but all of the previous seasonings were salt free so thats why I needed just a bit of Sea Salt to bring out the flavor.
All-in-all that took about 10 minutes to make … easy peasy!
