Cauliflower Oats

Hi guys!

Anyone who knows me knows I’m a bit of a health-nut, thus, I figured I should start sharing more of my ‘Abby-Approved’ recipes on here for y’all. Now the title “Cauliflower Oatmeal” may have you questioning my sanity, but I promise you it doesn’t taste how it sounds. Basically by substituting {riced} cauliflower to in place of your normal oats, you double the volume with none of the added carbs. So without further adeu, here is what you’ll need…

2/3 cup almond or coconut milk

1 cup cauliflower rice

2 teaspoons cinnamon

1 tablespoon cacao powder {or cocoa powder}

3 egg whites and/or protein powder

1/4 cup organic blueberries

your choice of sweetener {Stevia, Truvia, or Maple Syrup}

  1. Pour riced cauliflower into a food processor and grate until very fine and set aside
  2. Pour almond/coconut milk of choice into a medium saucepan and bring to a simmer.
  3. Add the grated cauliflower to the milk and stir to combine. Let the mixture come to a boil, the reduce the heat to low, and cook for an additional 2-3 minutes.
  4. Turn off the heat and stir in the cinnamon, stevia, and cacao powder.
  5.  Add the egg whites and/or protein powder and stir into the mixture {depending on which you use will determine whether or not you may need to add a little more milk}. Cover the pot and let it sit for 3-4 minutes for the egg whites to absorb. Stir again then pour in to bowl.
  6. Top with blueberries and cinnamon {or other toppings of choice} and enjoy!
